Fat Muffins

This muffin recipe is from my friend Monica. Although she calls them 'baby friendly muffins' instead of 'fat muffins.' She also adds coconut oil to her daughter's diet to increase her daily saturated fat. If you look closely at the ingredients you will realize that they is no sugar in them. I think it is because Monica is a nutritionist and thereby a super health nut. LOL Despite the lack of sugar they taste good and my daughter loved them. The only reason I call them 'fat muffins' is because of the added coconut oil. If you use canola oil instead of coconut oil they would be really. really healthy.

2 cups Instant Oats, plain
1/2 cup whole wheat flour or spelt flour
1 1/4 cup rice or soy milk
1/3 cup melted coconut oil
3/4 cup shredded zucchini
1 ripe banana, mashed
1/2 cup unsweetened applesauce
1 tsp baking powder
1/2 tsp baking soda
tiny pinch of salt
2 tsp cinnamon

Preheat oven to 400 degrees. Grease mini muffin tin. Mix ingredients well. Fill each muffin cup almost to the top (they don't grow too much). Bake 15-18 minutes.

Makes about 30 mini-muffins.
