Crockpot Minestrone

The original recipe is from crockpot365.blogspot.com and is called Pasta Fagioli, but I got the recipe from Busy Mom's Cookbook. Both a neat sites for recipe ideas.

The recipe is really good, easy, and makes A LOT. Next time I will make the full amount and the freeze half of it before I add in the pasta (pasta doesn't freeze well). This time I just shared with family and friends and we were able to eat it all up.

1lb ground turkey, cooked
1 cup carrots, chopped
2 celery stalks, chopped
1 can kidney beans, drained and rinsed
1 can of white beans, drained and rinsed
2 cans (14.5oz oz) diced tomatoes with the juice
4 cups of beef broth (check label carefully for milk protein, sub chicken broth if avoiding soy)
1 jar (16.5oz) pasta sauce
2 tsp oregano
1 T Tabasco sauce (I omitted this)
1/2 tsp salt
1/4 tsp black pepper

1/2 cup dry pasta, to add at end of cooking time

Directions

Use a 6 quart or larger crock pot. Brown the meat on the stove top and drain well. Let it cool a bit. Chop up the carrots and celery. Add the rinsed beans, both cans of tomatoes, pasta sauce, and beef broth to crock pot. Add salt, pepper, oregano, and Tabasco sauce. Stir in your meat. Cover and cook on low for 8 hours, or high for 4. When the vegetables are tender, stir in the 1/2 cup of dry pasta. Cover and cook for another hour on low, or until the pasta is tender. It will swell quite a bit.
