Raspberry Bars

I found this recipe in the magazine Real Simple. The only modification needed was to substitute soy margarine for butter. They make a very pretty and delicious bar cookie.

10 TBS soy margarine, melted
1 cup flour
1/2 cup sugar
1/4 tsp salt
3/4 cup rolled oats
1/2 cup raspberry jam
1 cup fresh raspberries

Preheat oven to 375 degrees. Spray 8X8 baking pan with vegetable oil spray. In bowl, combine flour, sugar, salt, and oats. Add in melted margarine and combine into dough. Reserve 1/2 cup dough. Press remaining dough into baking pan. Spread raspberry jam evenly across dough, leaving 1/4 inch border around edges. Scatter raspberries over the jam. Sprinkle remaining dough over raspberries.

Bake for 25-28 minutes. Edges will be slightly golden brown. Let cool before cutting.
