Chicken Salad- Dairy, Soy, and Egg Free

1 can (12.5 oz) cooked chicken (or cubed cooked chicken)
1 apple, pealed and diced
1 cup grapes, chopped
1/4 cup Craisins
Purely Decadent Coconut Milk Yogurt- plain
1/4 tsp thyme
pepper to taste

Mix chicken and fruit. Add yogurt one spoonful at a time until you get the desired consistency, mixing well. Add in seasoning and mix well.

I LOVE, LOVE, LOVE So Delicious coconut milk yogurt, but I never would have thought of using it to make chicken salad. What a great idea! I can't wait to try it! Thank you!
