Oatmeal cookies-gluten free

My friend went through this same elimination diet just last year. At one year, her daughter is still sensitive to cow's milk protein but at one point her mom was dairy, soy, eggs, wheat, and nut free (a few others too). She developed this oatmeal cookie recipe as a spin-off of the one that I posted.



1 banana

1 1/2 cups brown sugar

1/4 cup canola oil

2 teaspoons vanilla extract

1/2 teaspoon cinnamon

1 cup brown rice flour

1/2 c. gluten free flour mix (I used Bob's Red Mill)

1 teaspoon of baking soda

1/2 of a teaspoon of salt

2 1/2-3 cups oats

1 T. milled flax seed

3 tablespoons hemp milk

1 bag enjoy life chocolate chips

Mix the brown sugar, sugar, oil, and milk. Add the banana, flax seed, and vanilla. Then mix in the already pre-mixed together mixture of flour, baking soda, cinnamon, and salt. Stir in the oats. If it is too thin, let stand a bit so the oats can absorb the excess liquid. Bake at 350 degrees Fahrenheit for 13 minutes.
